Lazy Mommy Chickpea Salad
What you need:
1 cup chickpeas (either out of a can or soaked overnight)
1/2 cucumber, sliced up
1 small red onion
3 green onions
3 celery stalks
1/2 green bell peppers
any other veggies that you got- get creative!!
vegan Italian-style dressing (or whatever floats your boat!)
What you do:
Collect your chickpeas and sliced up veggies into a big bowl. Add the dressing until it tastes good... Enjoy!
(I said it was lazy, didn't I?)
