Lemon and Lime Pie

What you need: 

Crust
1 cup sunflower seeds
1/3 cup raisins, soaked for 10 mins or so
teaspoon of vegan liquid sweetner of choice
Filling
3 bananas, chopped
1/2 avocado
juice of 1 1/2 lemon and 1 lime

What you do: 

Make the crust by processing the sunflower seeds, raisins and vegan liquid sweetner in a food processor, add a little water if it needs help to bind together. Line a pie dish and press the mixture into the base.
Place the juice and bananas and avocado into a blender and blend until smooth, pour into the pie dish and put the whole thing into the freezer until it has set, taking care not to freeze as waiting for it to defrost and eat is difficult!

SO HOW'D IT GO?

OMG! I can hardly wait for this to set up.  I tasted the filling and the crust.  They are both fantastic and the filling tastes like key lime pie. My bananas and advocados were small so I used 4 bananas and a whole advocado.  For sweetener in the crust I used 1/2 dropper of liquid stevia.  So there isn't even any sugar! Thanks so much.

Okay I made it! I saw this recipe before going to sleep last night and woke up thinking about it. I had lemons already but my bananas and avocados at home are unripe at the moment. So I went out and bought some bananas at the proper stage of ripeness and a small avocado and came home and put it all together. I added a bit of agave to the lemon filling part because I have a huge sweet tooth. AMAZING!! This tastes so good. Next time I'm going to try adding in some more sweets and spices to the filling just to play around with it. I'm a normal vegan, not a raw vegan, but I'm becoming a huge fan of raw vegan desserts. The ones I've tried so far have been incredible. Thanks for posting the recipe! Smile Cool

This is a great recipe, I love how simple and inexpensive the ingredients list is, which can be rare with raw desserts :)  Instead of making a pie I made this recipe into tarts and it worked out wonderfully! I was able to make about 9 tart, but had a little pie filling left over, which I will use to top some raw granola :D Yummy, thx for the great recipe! I just prepared this and am waiting for it to set. I tasted the filling and OH MY GOSHHHH! It is SO good! I am so excited!

This was not bad.  I think I added too much lemon juice because it was a little too tart.  It sets better if it is slightly frozen.  This was nice and refreshing.

I can't wait to pull this out of the freezer tomorrow....I sampled some of the "batter" and it really reminded me of a key lime pie!

I had to adjust this a bit for what I had on hand, and so I used walnuts instead of sunflower seeds, and substituted 2 medjool dates for the liquid sweetener.  So easy to make, and so little cleanup...god, I love raw desserts!

sounds really interesting, im pretty sure i would be the only one to try it if i made it, but sounds like a nice summer-time pie
