Lucys Spinach and Mushroom Satay

What you need: 

2-3 tablespoons crunchy peanut butter
1 (15 ounce) can tomatoes
chile peppers, minced, to taste
oil, as needed
2 pounds frozen spinach
1 medium sized onion, diced
1 pound mushrooms, diced
salt, to taste

What you do: 

1. Mash up the tomatoes with the peanut butter and chile to form a liquid.
2. Put oil in a wok or large frying pan and when hot, add the liquid. Wait until the tomato sauce has started to bubble and orange at the sides.
3. Add the spinach and onions. Cook on low until all the spinach has melted. Add mushrooms, season with salt, and heat through.
Serve over brown or basmati rice.'

SO HOW'D IT GO?

Pretty darned tasty. It did need a little something extra, so I added a bit of rice vinegar and it was delicious. Soy sauce would probably be a good addition, too.

I had expected the peanut butter to add a strong flavor to this recipe, but in the end I thought this was pretty bland and the peanut butter taste was almost nonexistent. My non-veg mom liked it, but only after she put a bunch of salt on it. Even after the salt, I still thought it lacked taste. Maybe next time I'll do as another reviewer did and add a lot of garlic and a couple of other spices.
On the other hand, it was very nutritious and filling, especially after adding some chickpeas to include some protein in the meal. As it is now, I would recommend it just as a kind of "I'm starving-and-need-something-fast-and-nutritious" recipe.

It's a good base, but I agree that it needs more flavor than the recipe provides.  Next time I might even half the spinach (or double everything else) for more powerful flavor.

The first time I made this, I only used the igredients in the recipe...it came out digusting. There was absolutely flavor to it...just a mild aftertaste of peanut butter and the textures of the veggies.

The second time I made this, I added a good amount of chopped garlic (like 6 cloves), lots of cayenne pepper, and a bit of sesame oil....and it turned out awsome.

Made this for dinner-I thought it needed a bit of sweet to balance out the salty peanut butter so I added a heaping table spoon each of Hoisin Sauce, BBQ Sauce and chili sauce.  Served it over Jasmine rice -----yummy!  It was very filling and nice hearty warm meal for a cool night.

Made this last night for dinner, and it was INCREDIBLE.  I added some cooked lentils,  and it was heavenly.  I had it over brown rice, but I bet it's also excellent over cooked pasta, perhaps fettucine or linguini.  Tasty, filling, and inexpensive - it's one of my new favorites.  Thanks, Lucy!
