Marinated Green Beans

What you need: 

3/4 pound fresh green beans, snapped
1/4 cup red onion, chopped finely
3 cloves garlic, minced
3/4 teaspoon salt
2 tablespoons olive oil
3 tablespoons lemon juice

What you do: 

1. Fill a medium sized pot 3/4 full with water and bring to a boil. Add green beans and cook for 3 minutes, or until tender-crisp. Drain. 2. Mix still warm beans with onion, garlic, salt and olive oil. Leave mixture at room temperature for 1 hour, in order to let flavors mingle.
3. Immediately before serving, add lemon juice (otherwise the beans turn yellow). Best served the same day.
I have never run into someone who didn't love these green beans! They are packed with the flavors of garlic, onion and lemon juice. They are really wonderful with tiny new beans, but any fresh will do. Summer in a bowl!

SO HOW'D IT GO?

At first I thought these are missing something and realized I forgot the lemon. After the lemon it was AMAZING! so good.The only thing I didn't do was let it sit because it looked so good I wanted to eat them right away. Next time though I'm going to be sure to cut my onions up smaller, they were pretty big pieces.

These were extra good, I used power onion/garlic salt. Followed everything else to a "T". I will definitely be making again, and soon :D

This is YUMMY!  ;)b Just a really great mix of tastes. The red onion adds something special, as does the lemon juice. Would definitely make this again! Thanks!

Absolutely delightful.  The lemon juice makes it sing!  So much so that I've used the marinade on several other veggies and all met with critical acclaim. 
Thanks a bunch; I'd been wondering what to do with all those green beans...
