Mind Blowing Carrot Salad
What you need:
3 carrots, grated (I grate 1/2 coarsely and 1/2 fine)
3 tablespoons raisins
3 tablespoons raw sunflower seeds
juice of 1/2 lemon
1 tablespoon olive oil
salt and pepper, to taste
pinch nutmeg
pinch cinnamon
What you do:
1. Combine the carrots with the other ingredients.
2. Mix well.
I never thought I would like a carrot salad, and certainly didn't think I could eat this entire huge bowl of carrots, but I was wrong! This is so delicious. I ate it before work and spent my whole shift waiting to come home and make some more!

This recipe is nothing short of amazing. I've made it countless times and have yet to find someone who doesn't love it.
Made this the other night and really enjoyed it, super easy a good summer side dish. I added a little bit of honey salt which tasted pretty tasty.
Yum yum! This is quickly becoming a regular in my kitchen. I always make a double batch. I've been using raw agave in place of the oil (1 Tbsp agave per 6 carrots) and sliced almonds in place of the sunflower seeds, but will try it with seeds next time. Thanks for the post!
So simple and delicious!!
I made this for my raw class studens last night and they loved it. I made it tonight for dinner, and thee only problem I see is if it will last until dinner time!
