Mock Tuna Salad
What you need:
1 (15 ounce) can chickpeas, drained and rinsed
2 tablespoons vegan mayonnaise or pureed silken tofu
1 tablespoon sweet pickle relish
2 teaspoons spicy brown mustard
salt and pepper, to taste
What you do:
1. In small bowl, mash chickpeas.
2. Add mayonnaise or silken tofu, pickle relish, mustard, salt and pepper, and mix well.
This is wonderful in a whole-wheat pita with sprouts and some chopped tomato!

I am shocked! I honestly thought this might taste similar to tuna salad, but once I made this I couldn't believe it! It honestly tastes so similar to tuna salad, if I didn't know what was in it, I would think it was tuna salad. I followed the recipe exactly and followed the other reviews and added a bit of chopped onion and celery. Absolutely delicious ;)b
Made this again, this time i fed it to my mom and she loved it!
Also, the chick peas really need mashing or better yet, crushing.
The directions say to mash the chickpeas, no? That's what gives it the "tuna-like" texture & appearance.
Sorry, I guess I should have emphasized REALLY need mashing. I mashed, just not enough, so I got chunks of bean that detracted from the texture. Perhaps I should have said one needs to mash thoroughly... ;) This was my first time making and I will make again... I also wonder about using more than one type of bean. Will have to experiment.

Good, but could be better... I made mine with the Vegan Mayo recipe on this site due to finding no mayo in the house... I added a little lemon juice & pepper. Crunch could be helped with celery and onion (had neither). Also, the chick peas really need mashing or better yet, crushing. Will have to play with this recipe, but it's a great start!
Great recipe! Very quick and easy, and tastes very good. Sometimes I make a big container of it to keep in my fridge for quick sandwiches.
I also added relish, omitted the green pepper, added lemon juice and celery seed.

Mmmm. So good!!! I'm eating it right now on crackers, its the best. I changed it a bit and used regular mustard, celary seed, dill relish, garlic powder, salt, pepper, dill, and a little bit of lime juice. Mmm
This was really good. I made vegan tuna melts out of it with tofutti slices, bacos and crumpets. Only thing I would change is I prefer plain yellow mustard and dill relish. ;)b
I tried this recipe tonight, and wow was it good! I added a tablespoon of dulse flakes (sea vegetable) and 1/2 teaspoon of celery seed. I used pickles instead of the sweet relish and yellow mustard instead of the brown mustard. It tasted like what I remember from childhood, only better, of course. ;) Thanks for this recipe! :)
