Moroccan Stew

What you need: 

1/4 cup water or veggie broth for sauting + 1 to 2 cups for stewing vegetables in
Two large onions, chopped
Four cloves garlic (large cloves, mash these)
1 teaspoon ground cumin
1 teaspoon tumeric
1/2 teaspoon cinnamon
1/4 to 1 teaspoon cayenne
1/2 teaspoon paprika
2 diced sweet potatos
2 diced zuccini
2 diced summer squash
1 diced carrot
2 diced tomatoes
1 diced bell (green) pepper
2 or 1 (depending if you like the buggers) cans garbanzo beans (drained)
raisins (howe'ver many you like, I used a cup of raisins).

What you do: 

Saute onions, garlic and spices in water or veggie broth. Add sweet potatoes, zuccini summer squash and carrots. Let stew. Add water as necessary. Add tomatoes, bell pepper and garbanzos. Let stew. Add raisins. Cook until potatoes are mushy or done to your liking (about 30 minutes).
Serve over couscous or rice.

SO HOW'D IT GO?

I love this recipe!  It's always a little different depending on what looks good at the grocery store - the veggies are infinitely flexible. 

Usually, I make this with less garlic and more paprika - smoked paprika.

It's good with French green lentils instead of beans. 

I like to do the cooking in a pressure cooker - 4 minutes.  I cook the beans or lentils separately and add them after the pot cools.  I add the raisins then too - otherwise the pressure cooker makes them disappear.

This was awesome! I made extra broth and thickened it with corn starch and just served it in bowls, no rice or cous cous.

i made a version of this last night that was a bit lighter because i served it with the coconut black beans on here, instead of rice.  this is what i did:
1.5 onions
lots of garlic
1 squash, cubed
1 carrot
can of diced tomatoes
2 leeks
3 cans of veggie broth
some mushrooms (ick, bf put them in)
and the seasoning exactly as it is up there

and it was YUMMY!  i would have never thought of those seasonings in a soup for some reason, but i'm so glad i tried it.  thanks for the awesome flavor combo!

This was absolutely excellent!  I left out the summer squash because I didn't have any, I used a can of Muir Glen diced tomatoes instead of the fresh, and I added vegetable broth instead of water.  It was a big hit at my home, I will definitely make this one again.
