My Own Vegan Tzatziki Sauce
2 cups vegan mayonnaise (I use Vegenaise)
1/2 seedless cucumber, diced small
3 cloves garlic, minced
1 tablespoon lemon juice
handful flat leaf parsley, chopped
salt and pepper, to taste
pinch paprika
1. Combine all ingredients in a bowl.
2. Chill for about 1 hour to let the flavors mingle.
This is a delicious sauce! You can put it on falafel patties, veggie kebabs, sandwiches, anything at all! Try it, you'll love it!
Source of recipe: I was making falafel patties for a Mediterranean themed dinner party and envisioned a cool cucumber yogurt sauce I would serve on the side. I figured it would be easy to switch regular yogurt for plain soy yogurt. It came out so disgusting. A lot of soy yogurts out there have added sweetener and does not work for this recipe. I had to think quickly at the last minute so I decided to try vegan mayo instead of the yogurt. I'm glad I did.

We made this to put over falafel, it was delicious!
Ok, I found another use for this wonderful sauce! Last night I had it with falafel but I made too much so I had lots of sauce leftover. (Probably best to cut the recipe in half next time!)
So this afternoon I was hungry for lunch. I decided to make a tofu salad sandwich but with a tzatziki twist!
All you need:
1/2 block tofu, mashed
2 TB of 'My Own Vegan Tzatziki Sauce'
1 TB of vegenaise or any vegan mayo
1 tsp dijon mustard
salt and pepper to taste
a pinch of turmeric for color
Mix all together and use it as a sandwich filling on your favorite bread. It's so good because of the garlic in the tzatziki sauce!
Just wanted to note that this sauce is great on salad. The sauce is thinner than the usual yogurt based tzatziki sauce so it's perfect. I used it as salad dressing for my lunch yesterday. It was so creamy and delicious!
