Nutritional Yeast Queso Sauce
1/4 cup nutritional yeast
1/4 cup flour
1 teaspoon paprika
1 teaspoon salt
dash garlic powder
1 cup water
2 tablespoons margarine
1 1/2 cups salsa or 1 (10 ounce) can diced tomatoes and peppers
tortilla chips, to serve
1. In a saucepan combine dry ingredients (nutritional yeast, flour, paprika, salt, and garlic powder).
2. Whisk in water. Continue to whisk constantly over medium heat until mixture is thick and bubbly. Remove from heat.
3. Stir in margarine until melted, then stir in salsa. Return to low heat and cook just long enough for salsa to heat.
4. Pour over chips and eat like nachos or use as a dip.
Remember to always whisk it!
Source of recipe: I got this recipe from a friend a couple of years ago and it is by far the best vegan queso I have ever had. Add this to any and all Tex-Mex that you make or use as a spread on sandwiches.

THIS IS THE BEST stuff in the whole world!! this was my firs time working with Nutritional yeast... (I'm not vegan yeat, however with the help of this website i will be SOON!) Great stuff.. even the Carnavor hubby, ate 1/2 the bowl and asked for me to make more!! he couldn't believe it didn't have cheese in it! Thank you SOO much.. even a fool in the kiten like me really can't mess it up.. 5 STARS all around!!
This is the best nutritional yeast sauce I have tried so far. I have a mild cashew allergy, so I have to avoid the more popular ones that contain cashews. I added salsa to this and it was awesome.
This is an excellent idea! I was really excited to try this recipe and it was a total success. Great flavor and perfect for nachos! The only thing I did different was add fresh parsley because I had a lot and didn't want to waste it & I love fresh parsley. It was perfect! Thanks for the great recipe!

I just found this out myself, after my grocery store replaced its usual NY flakes with some almost neon-yellowish powder...it was in the same bulk canister, and they hadn't changed the label, but it was quite obviously a different product...
It pretty much resembled the flavor of the kind I used to buy there...but it had this icky sourness to it that completely RUINED my attempt at a cheese sauce very similar to this recipe (pretty much just without the salsa).
I'm wondering if it wasn't accidentally filled with brewer's yeast or something...Or if other brands just process the stuff differently.
The taste and quality of your NY may vary quite a lot! So, I recommend experimenting with any and all brands you can get your hands on (buy small quantities, like 1/4 cup or less at a time), because some of these "cheese" recipes are well worth it!
This is great! When I became a Vegan, I was missing my taquitos and queso. This recipe definitely helps with the craving. I make taquitos now with smart ground and we can dip them in our "queso". My husband was blown away. Thanks!

I also like KAL brand that comes in a canister...and YES its an acquired taste. I didn't like it at first either, but now I crave it all the time!!! Be sure you're not using brewer's yeast-that would be gross!
Didn't like this "cheese" sauce at all! :-[ For me, it was't even close to tasting good. I even followed the recipe exactly. I don't think i'll be making any more "cheese" dishes for a while. At least nothing with nutritional yeast. I can't get it to taste right. I like it sprinkled on popcorn, but making a fake cheese out of it? Maybe i need to develop a taste bud for it.
Hey jennveg! I agree that nutritional yeast is an acquired taste (like most things), but I was wondering what brand you are using? In my experience, Red Star is the ONLY brand that tastes good. I've bought some other ones and they have a very funky, pungent taste. If you haven't tried Red Star yet, I recommend it...whenever you're up for nutritional yeast cheeses again! :-)
