Potato Soyrizo Taquitos
5 small or 2 large potatoes, chopped
1 medium onion, diced
oil, as needed for frying or baking
1 (12 ounce) package vegan chorizo (I use soyrizo)
20-30 corn tortillas
1. Preheat oven to 400 degrees F, if baking. Boil potatoes until soft, and mash until you have a fine paste. Saute onion until golden in a few tablespoons of oil.
2. Add the mashed potato, vegan chorizo and a little more oil and fry over medium heat until golden and delicious smelling.
3. Soften tortillas by either heating them over an open flame, or quick frying them in a little oil until soft. Spoon a few tablespoons of chorizo potato mixture into each tortilla and roll up into a taquito.
4. When all taquitos are rolled up, either fry in batches in 1/2-1" oil, or bake until golden brown for about 20 minutes.
Super yummy with sour supreme, guacamole and homemade salsa (make it spicy).
SO HOW'D IT GO?
This is a pretty good recipe. To add a little more flavor, I sauteed the onions with minced garlic. added sea salt, black pepper and chili powder for some kick. Homemade guacamole goes well with this. My omni bf and sisters ate these up!
I made these sunday. I added a packet of taco seasoning and salsa. They were really good.

I really enjoyed these! I thought they were a little bit bland at first, but they grew on me as we were eating. I did add extra garlic, mainly because I chopped too much for another recipe I was making at the same time, but I think it was a nice addition. I baked them because I'm too lazy to fry things often. They certainly didn't need the extra fat to taste good (although I imagine they'd taste good with it too! ;D)
These r really good... the filling is awesome... i might make a wet burrito with the extra filling i have left over... i tried to deep fry these and it was NOT a good idea... but these were easy to make on the stove with some oil as u directed and turned out great!
these were soooo easy. i baked them and they turned out just as crispy as they should. yum!
