Spinach and Strawberry Couscous with Sweet Lemon Dressing
1 box whole wheat couscous
1 large bag frozen spinach
1 quart strawberries, hulled
3/4 cup rice vinegar
1/4 cup sugar
juice of 1 lemon
2 tablespoons maple syrup
2 tablespoons sesame oil
1 tablespoon soy sauce
Cook couscous as directed.
Unthaw spinach in microwave (approximately 6 minutes).
Hull strawberries.
Combine spinach and strawberries and mix with vinegar and sugar mixture--chill in refrigerator.
Mix remaining ingredients (lemon juice, maple syrup, sesame oil and soy sauce) combine with couscous and mix well.
Combine both spinach and strawberries with couscous in large bowl and enjoy!
Serve on a bed of lettuce with other veggies or by itself--it is really, really yummy!!!
