Super Easy Organic 3 Bean Chili for a Rainy Oregon Night

What you need: 

2 cans of organic diced tomatoes
2 small cans of organic tomato sauce
1 organic green pepper
1 organic medium size onion
5 organic vine tomatoes
1 bag frozen organic corn
fresh garlic cloves
1 can organic black beans
1 can organic pinto beans
1 can organic dark red kidney beans
1 package organic vegan chili seasons
cayenne pepper

What you do: 

1. Cut up all veggies and garlic and place in a large bowl. Use as much garlic as you like...the more the better!
2. Rinse off all the beans in cold water
3. Toss EVERYTHING into a large pot, cast iron is the best.
4. Heat on SIMMER-LOW heat so the flavors absorb! Let it cook for about 45 min. to an hour, checking and stirring occasionally.
5. Ladle into bowl and eat!
It's even better if you make some brown rice with it!! :)
I made this on the first cold and rainy night in Portland and it just warmed me right up!!!
