SO HOW'D IT GO?
Wonderful recipe! I made a small amount as suggested but with fresh strawberries, and tried adding banana, a spoonful of honey and a splash of soy milk for the next day's breakfast. A really good summer drink if you make it thinner, or a good start to the day.
Question: If I make a smoothie w a container of Mori-Nu silken tofu, can I put leftovers in the fridge? Will it keep or does tofu go bad like this? I am very new at doing anything w tofu, so any comments will help. Even if I use half of the tofu in the smoothie, any suggestions with what to do with the other, unused half?? Silken seems so hard to use in anything else...
I don't know about your smoothie leftovers, but I think they would be just fine in the fridge. Probably not a good idea to freeze it.
I use silken tofu in all kinds of things! I use it to make thick, creamy soups (tomato, potato, split pea, etc.), I use it to make pumpkin or sweet potato pies, and I've even been known to put it in spaghetti sauce to add a protein boost. Since it really has no taste, it can be blended into just about anything saucy or soupy to add protein and to thicken.
