Totally-Bad-For-You Peanut Butter Bon Bons
2 cups peanut butter
1/2 cup canola oil
3 cups vegan puffed rice cereal
1 lb sugar
3 11 oz bags vegan semi-sweet chocolate chips or more
Melt the peanut butter and canola oil in a medium saucepan over medium-low heat, stirring frequently.
In large bowl, mix the cereal and sugar. Pour the peanut butter mix over the cereal mix, and stir until well combined.
Make into 1 inch balls and refrigerate 2 hours, or until firm.
In double boiler, melt some of the chocolate chips (howe'ver many your double boiler can safely hold.) Drop the peanut butter balls into the liquid chocolate (maybe five at a time) and stir them in the chocolate until they are fully coated. With fork, remove bon bons from the chocolate and place them on wax paper. Add chocolate chips to double boiler as needed.
Let bon bons cool on wax paper until hard. If need be, put them in the refrigerator BRIEFLY (preferably not more than 5 min. or they will get sugarbloom).
These are absolutely not healthy (except maybe protein from the peanut butter) but they are every bit as delicious as they are bad for you.
SO HOW'D IT GO?
1lb of powdered sugar is not that much different from 1lb granulated. 3&3/4 cups granulated vs. powdered would be much different, however. Anyhoo, these were pretty awful, sorry to say. Very greasy and made me sick to eat(they got chucked). I would nix the canola oil, maybe that would make them more edible.
Also, the balls are not holding togther for me at all. I would eliminate the canola oil from the recipe.
A pound of powdered sugar and a pound of granulated sugar are completely different, and this recipe doesn't say which one to use...?
3 3/4 cups of sugar???
That sounds outrageous and probably not needed. I wouldn't use nearly that much.
