Vegan Bagels
1 cup warm water
1 1/2 teaspoons yeast or 1 (1/4 ounce) package for manual directions
3 cups unbleached white flour
1 1/2 teaspoons salt
2 tablespoons vegan granulated sugar
sesame seeds, toasted, optional
Bread Machine Directions:1. Except for sesame seeds, place all ingredients in bread machine and set for normal white vegan bread. (You may also add whatever seasoning you'd like for a flavored bagel at this step.)
2. Let the machine knead once and then turn off the machine and set a timer for 20 minutes. Grease a cookie sheet.
3. Cut into eight equal pieces. Roll each piece into a rope about 1" thick, wet ends and stick together. Transfer to prepared cookie sheet, cover, and let rest for 15 minutes in a warm place. Preheat oven to 550 degrees F.
4. Fill a wok (or whatever you use) with about 3" water. Place vegan sugar in this water and bring to a boil. Add bagels for 1 minute, turning them as they boil. Drain.
5. Return dough to cookie sheet. Sprinkle with toasted sesame seeds. Bake for 15 minutes, or until desired browning occurs.
Manual Directions:1. Add warm water to a small bowl. Sprinkle on the package active dry yeast; do not stir. Cover with a saucer and allow to proof for 5 minutes. Stir and allow to proof for an additional 3 minutes. Mixture should be frothy. If it isn't, discard and start over.
2. In a bowl, mix together flour and salt. Mix in yeast-water mixture and lightly knead in the bowl. Cover and set aside to allow dough to rise, about 1 hour. (You may add whatever seasoning you'd like for a flavored bagel when adding the flour and salt.) Grease a cookie sheet.

SO HOW'D IT GO?
550 degrees was way too hot for these bagels and ended up burning my topping :c.
Despite that, they were chewy and really really good :D
Turned out fantastic! Shared a bunch and everyone loves them.
These taste GREAT and they're super easy to make. The first time I made these I baked them at 500 and ended up burning them. Nowadays I tend to leave them in the oven at 400 for 15 minutes then 500 for a few minutes.
Okay so regardless of the size mine ended up being, these taste FANTASTIC! I added Parsley, Basil, and Rosemary. SO GOOD! Mine actually ended up with a crunchy outside and soft middle!
like others, I cooked mine on only 500 degrees. These were really good, I am for sure going to keep attempting them so I can get them BIGGER and fluffier!
I have tried these so many times and can NEVER get them to rise properly! I usually don't have trouble with getting my bread-type recipes to rise but these are like ARG! hahaha. NOT GOING TO GIVE UP THOUGH! With all these positive comments it's clearly something I am doing wrong! and I will figure it out! hahaha.

I did however have success with kicking the temp down a notch (to 400-450ish) but baking them for the same amount of time, as the tester bagel I put in first was already burning on the bottom after 10 min @ 500.
Oh, and lastly, I also went for the shaping strategy of ball-rolling and hole punching, versus making a circle out of a rope of dough. But I'd guess they're both equally valid.
Anyhow, thanks for an explicitly written recipe that begs few questions!
This is an easy to follow and successful recipe. However, like other reviewers, I was hesitant to bake the bagels at the recommended temp and time so I baked them for around 10-12 min at 500 degrees, flipping them a few minutes before I took them out. This seemed to work all right and browned them more evenly. I made them cinnamon raisin bagels and they are way better than store bought!
i've had this in my recipe box for ages...and i'm kicking myself now for not trying it sooner! delicious! the only thing i did differently was bake at 400 F for 15 minutes because i don't like a dark crust. i have the feeling these are going to be addicting! can't wait to try variations...whole wheat, sunflower seed, sea salt...yum!!! : )
I've been dying to make some bagels for brunch! Can't wait to try this recipe and throw some NM green chiles in them....mmmmmm......
Got some cherry blueberry bagels in the oven right now. They smell divine! Can't wait to try one. I doubt I'll make it til breakfast.
