Vegan Donut Holes
oil, as needed for frying Topping:
1 tablespoon cinnamon
1/4 cup sugar Donuts:
2 cups flour
1/2 cup evaporated cane juice sugar
3 teaspoons baking powder
pinch nutmeg
2 egg Ener-G egg replacers
3/4 cup nondairy milk
3 tablespoons safflower oil (or a light, high-heat oil)
1. Preheat deep fryer to 350 degrees Fahrenheit. Mix the cinnamon and sugar together in a bowl for topping. For donuts, mix together dry ingredients.
2. Add egg replacers, milk and oil. Blend with a hand mixer until smooth and doughy. Roll dough into teaspoon sized balls and place in deep fryer rack.
3. Cook each side for about 3-5 minutes, or until light golden brown. Be careful not to make too big of dough-balls, or they will not cook all the way through, and you will end up with a gooey center.
4. If you are using the oven, cook in about 1" water. Be careful not to make the oil too hot, or they will not cook all the way through.
5. Remove from oil and roll donut hole in cinnamon and sugar mixture. Use a fork or spoon so that you don't burn yourself! Let sit for about 5-10 minutes to cool, and enjoy!
SO HOW'D IT GO?
I made these again tonight, but the only flour we had was whole wheat. I had to add more almond milk, but they still came out great!
These came out great!
I tested the temp of the oil so I know it was at 350 but the first few I threw in there burned very quickly. (I checked them as soon as I finished putting the rest in and I only made 5 or so at a time.) I turned it down slightly and got better results with that.
I also had issues rolling the batter into little balls, so, I just spooned them into the oil. (Maybe this took a little longer, causing the burning issue above.)
Overall, mine came out more like fry bread or the donuts from a Chinese restaurant than what I was expecting. This is also my first attempt at homemade donuts, so maybe my expectations were unreasonable.
This recipe was really good. The only problem was the batter was too sticky to form into holes. Also they didnt keep their shape in the oil. However the taste was amazing.
These were really good and crunchy on the outside. Great for rolling in powdered sugar!
The recipe reminds me of my mom's only these are vegan which is so awesome because I haven't been able to find a good vegan donut recipe. Thanks!
Man, I don't know what I did wrong, but these didn't work for me. They absorbed lots of oil and while they poofed nicely, they didn't hold their shape. I am thinking I needed more egg replacer, maybe. The batter was delicious too, and I have about half of it left, so I'm thinking of trying it baked to see if my results improve any.
Sometimes if the oil hasn't heated up yet, it could ruin it. This recipe has always worked for me! ^-^
