Vegan McGriddle
[u]"Sausage"[/u]:
soy sausage or make some with textured vegetable protein [u]Pancake[/u]
1-1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon sugar
1/4 teaspoon cinnamon
1/2 cup nondairy milk or water [u]"Egg"[/u]:
1/2 (12-ounce) block tofu, sliced thin like for tofu bacon
1/2 teaspoon turmeric
1/4 teaspoon chili powder
1/4 teaspoon cumin
1/4 teaspoon salt
1 tablespoon olive oil [u]The Fixings[/u]
agave or maple syrup
1 slice vegan cheeze
My husband LOVES these. It's his invention. We saw the movie where that guy eats McDonalds for like a month and so this is like the sandwich he eats that has like a pancake biscuit thing.
1. "Sausage": Heat the soy sausage.
2. Pancake Batter: In a bowl, mix together flour, baking powder, baking soda, salt, sugar, and cinnamon. Add nondairy milk until the batter is thick, but still able to pour, like muffin batter. (You don't have to use the whole 1/2 cup of milk unless you want thinner pancakes.) Half batter to make two pancakes and cook in a skillet. Place pancakes on a warmed plate and cover to keep pancakes warm.
3. "Egg": In a bowl, mix together the turmeric, chili powder, cumin, salt, and oil. Carefully coat tofu slices with seasoning. Pan fry the tofu until heated and beginning to brown.
4. Place on plate in the following order: drizzle syrup, pancake, tofu, cheeze, sausage, pancake, and drizzle the very top with more syrup!! Must eat with a fork, it's huge!!

SO HOW'D IT GO?
A nice addition might be some maple candy, chopped into small chunks and folded into the pancake batter. "Real" McGriddles have those little bits of maple in them if memory serves. Then you could wrap them in parchment and eat on the run with no syrup required!
AMAZING. We added a bit more flour and sugar to the pancake batter to give it a consistency that allowed us to eat it like a sandwich. We also made plenty of the oil/spice concoction (maybe 1/8 c. worth) and made sure to salt the tofu as it fried. Take that Ronald!
I made this a couple of weeks ago and they were awesome! I actually didn't see this recipe until now, but I made basically the same thing - but instead of pancakes, I made french toast for the bread and had syrup in a little cup for dipping. Definitely an awesome breakfast sammy when I have the time!
this is SUCH a great idea. my bf jacob and i made these last night and they were outstanding. i modified it by making my own pancake batter (i just add spices and stuff) and i added garlic/nutritional yeast to the eggytofu. we couldnt find any vegan bacon, otherwise we were going to try that. we used vegan sausage instead. yum. we ate so much we were stuffed. we will be making a concoction like this again! thanks for sharing!
