Versatile Bran Muffins

What you need: 

1-1/2 cups oat bran
1-1/4 cup liquid (nondairy milk, water, or fruit juice)
1/3 cup maple syrup or other liquid sweetener, adjust to taste
1/4 cup vegetable oil
1 cup flour (preferably whole-grain like rice, oat, or spelt)
1 tablespoon baking powder
1/2 cup fruit, or to taste (optional)
1/2 cup nuts, or to taste (optional)

What you do: 

1. Mix oat bran, liquid, sweetener, and oil. Let sit for a couple minutes.
2. Sift in flour and baking powder; mix thoroughly. Add fruit and nuts.
3. Spoon into muffin tin and bake at 400 degrees Fahrenheit for 22 minutes.
Once you've made the recipe a couple times and have the consistency of the batter down, try substituting things like applesauce, cooked pumpkin or mashed bananas for all or part of the liquid, and adding spices like cinnamon (goes well with blueberry muffins, or pumpkin, or apple), cloves or allspice. These muffins have only failed me when I forgot to add the baking powder, and even then they tasted OK.

SO HOW'D IT GO?

This recipe was soooo simple and it came out perfectly! I used agave nectar for the sweetner, almond milk for the liquid and some raisons for added sweetness. Next time I will try adding some nuts and apple sauce.  Thanks for the recipe! :D

Made these last night and they were perfect. Just sweet enough to kill that craving. We did substitute with oat bran instead of wheat bran and they still were great. Had 2 before I went to bed last night.

This recipe was awesome. I ran out of wheat bran so I used some vegan buckwheat pancake mix I had on hand mixed with wheat flour. For the fruit I used bananas and dried rehydrated cranberries.Yum yum!! ;)b

These are absolutely delicious! I made them yesterday for my omni Latin club, and everyone loved them. I added one chopped apple, a lot of raisins and a few slivered almonds. My only problem with these muffins was that they were very dry and crumbly - I dropped one and it practically shattered. I'm going to try them again with some mashed banana to see if it helps them hold together a bit better.

These were very quick and easy to make, and they taste amazing. I'll definitely be making these often!

These bran muffins taste healthy and delicious... I used water for the liquid, 1/2 c. agave, and 1 c. blueberries with whole wheat flour (didn't have anything else on hand). I also added 1/4 c. flax meal and 1 tsp. cinnamon. These muffins are hearty and not too sweet, but the blueberries added sweetness. Overall, these were great!

Tasty.  I made a half-batch of mini muffins with oat bran and a 50:50 mix of spelt and rice flour.  I subbed left over smoothy (strawb and nana) for the oil and added broken bits of dark choc and some walnut pieces.  Quick and easy.

Used applesauce intstead of oil, and splenda for the sugar, and just a small bit of maple syrup to make it a little sweeter, and threw in fresh blueberries and flax seed.  Mixed a little soymilk and confectioners sugar to drizzle on the top.  Great healthy snack when you're craving a dessert.

This was yummy. I used wheat bran and wheat flour. I also put dates and raisins in the muffins, and used a little more than half a cup of maple syrup. I added 2 TS of flaxseeds as well. Turned out yummy. I can't wait to experiment some more with this recipe!

Healthy and delicious.  I subbed applesauce for all the oil.  A tablespoon of baking powder seemed like a lot, so I used a teaspoon apiece of baking powder and baking soda.  I used granulated sugar, a little less than a third of a cup, and I added a bit of water.  I threw in an apple, some raisins, some walnuts, and some flaxseeds.  DELICIOUS!  I've eaten seven already today, lol, and will probably eat the remaining five by bedtime.
