Very Simple Blueberry Muffins

What you need: 

1 1/2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon salt
3/4 cup nondairy milk
1/4 cup vegetable oil
1 cup frozen blueberries

What you do: 

1. Preheat oven to 400 degrees F. Place baking cups in a muffin pan.
2. In a mixing bowl, combine flour, sugar, baking powder, and salt. Stir in nondairy milk and oil.
3. Fold in blueberries. Pour into baking cups and bake for 25 to 30 minutes.

Thank you, thank you, thank you for the recipe. My sister loved them, she had one on yesterday's dinner and one today for breakfast.
I'm going to try them with strawberries, and with many other things.

These muffins were good, although they seemed to be missing something.  I used frozen mixed berries.  I think that I will follow some of the changes that others have mentioned the next time I make these.

I baked these this evening. They're yummy! I used fresh blueberries instead of frozen, which I picked up at the market.

Made these muffins a couple weeks ago, with some amazing organic blueberries I found in the freezer section. I used whole wheat flour, substituted applesauce for the oil, and used a greased muffin pan, as was recommended by many other reviewers. They turned out DELICIOUS! even though they were "healthy," I accidentally left them out on the counter, and the next morning there were only two left (out of about 9). So I guess my roommates agree with me on this one; they're amazing.

I'm baking them again right now, with craisins and chocolate chips (the only things I happen to have right now), and I'm sure they'll turn out amazing. I'll post pictures of both batches when I locate my camera. =D

holy crap these muffins are delicious!  i woke up sorta early today and thought i could squeeze in some muffin time before i headed to work; man, this is the easiest recipe to knock out!  i even modified the original based on skimming through reviews:
- used 1/2 cup spelt flour
- 1/2 cup whole wheat flour
- 1/2 cup oats
- added a tsp of maple extract
- plus 2 tbs of ground flax

( - and my blueberries were fresh, so they were juicy and delightful: no sinking!)

they were simple to put together and so good to eat fresh out of the oven, plus when i got home from work my apartment smelled delicious from the morning baking!  try 'em!  modify 'em!  they are user friendly, for realz.  mmm.

I added some unsweetened dark chocolate pieces from a leftover candy bar and used fresh blueberries instead of frozen. It was yummy but I think it needed more sugar. Was not sweet enough for me but the little ones loved them.

Be sure that the blueberries are in the middle of the dough or they leak through the paper muffin cups.  These are very easy to make and delicious. Thank you.  I will make these often even if I have to use frozen blueberries in the winter.  could probably use strawberries or other berries with the dough and would be delicious.

these are so simple to make and they taste so perfect. i finished that last of the blueberries the other day so i used chocolate chips instead. i love this recipe, i now have it memorized!

This was absolutely amazing. I'm making another dozen tonight! So simple, yet so tasty. Honestly these have got to be the best blueberry muffins I've ever had!

I meant to say I never use cups, just the pam spray in a muffin pan!

I edited mine a little bit too:

1 cup whole wheat flour
1/2 cup rolled oats
1/4 cup applesauce (instead of oil)
a few dashes of cinnamon
and sprinkled sugar and cinnamon on top

I just made these with that recipe and used brown sugar, but the muffins are like glued to the paper cups...
why did that happen? how do you prevent that??
please help!
