Whole Wheat Banana Muffins
nonstick spray
2 1/2 small bananas, very ripe
2 tablespoons olive oil
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
1/3 cup water
1 1/3 cups whole wheat pastry flour
3/4 cup turbinado sugar
1 tablespoon baking powder
1/4 teaspoon salt
1/2 teaspoon nutmeg
3/4 cup oats
1/2 cup walnuts, chopped
1. Preheat oven to 350 degrees F. Grease muffin tin. Thoroughly mash bananas in a small bowl. Mix in olive oil, vanilla, almond, extract, and water.
2. In a separate bowl, combine flour, vegan sugar, baking powder, salt, and nutmeg. Add the banana mixture to the flour mixture, stirring well.
3. Stir in walnuts and oats and spoon mixture into prepared muffin tins. Bake for 20-30 minutes, or until lightly browned.
Delicious warmed and topped with vegan butter or jam.
SO HOW'D IT GO?
Made these as is, except with a bit more banana. Delicious - and they also sold briskly at today's vegan bake sale.
Thanks for the recipe! I made some tweakings - hope it isn't rude to repost them, but just in case anyone else is looking for suggestions. I'm a recipe tweaker, and I'm sure I'll tweak it differently next time! Anyway, I used half the amount of pumpkin pie spice to substitute for the nutmeg, some extra vanilla to substitute for the almond extract it a little bit as I am overrun with bananas, dislike walnuts, and don't have any nutmeg or almond - heh. I doubled it, using 4 large bananas instead of 2 and a half small ones. I used a bit of pumpkin pie spice blend for the nutmeg and a little extra vanilla extract. Didn't add the oats and walnuts, but I did add a couple handfuls of blueberries. It was SO good! Quite moist! I made mini-muffins as well - the minis were done in about 15-18 minutes and the regular ones were ready in 20-25. Next time I might do chocolate chips instead of blueberries.
These muffins are awesome. I'm still fairly new to vegan baking...but have been working on finding the perfect vegan banana bread recipe for the past couple of days (1 lb of overripe bananas will make you want to do that). I made these without the almond extract...adding extra vanilla instead, forgot the walnuts, and used a bit of cinnamon in place of the nutmeg. I also added an extra half a banana. They came out moist and not too dense like whole wheat does sometimes. Thanks!
