Zandra's Veggie Noodle Soup
10-11 cup water
2 medium potatoes, cut into cubes
2-3 carrots, sliced into discs
2-3 celery stalks, sliced
1/2 cup onion, chopped
vegetable bouillon measured accordingly for water amount (I used 1 1/2-2 Tablespoon Better Than Bouillon)
2-3 Tablespoons soy sauce or Bragg Liquid Aminos
2 1/2 cup rotini pasta
1 teaspoon garlic salt
salt and pepper to taste
1.) In a large pot, bring the water to a boil. Add potatoes and carrots and cook until they become just slightly tender, about 10 minutes.
2.) Add the remaining veggies and the vegetable bouillon. Follow measurement directions according to the amount of water used for the specific bouillon you have, and/or flavor to your desired taste. Add Soy Sauce/Bragg and garlic salt. Stir. Cook on med-high heat for 5-10 minutes, preferably covered.
3.) Add rotini pasta and cook for another 10 minutes or so, until the pasta and all the veggies are tender. Add salt and pepper to taste. Enjoy!
SO HOW'D IT GO?
Delicious and nurturing ;)b. Quick and easy. I did not have enough bouillon for the amount of water called for in the recipe. So instead I used 6 cups of water and adjusted the ingredients down by 1/4 and it came out great. It's like the old hearty vegetable soups I remember my grandma made whenever I had a cold. I didn't have garlic salt so I used garlic powder and a garlic'n herb mixer, other than that stuck with it. nom nom!
