If you had a chance to open your own vegan restaurant what kind would it be? ex. a.sandwich shop, a pizzeria, a vegan bakery, a general restaurant etc etc.

After my husband retires and we settle down in one place I actually plan on opening up a vegan bakery/coffee house. :)

haha...its funny you asked this b/c some friends of mine/ our family have been in the midst of change and were thinking "whats next?" ...and weve been kicking around the whole idea of opening a Tea Shop ...we have a loose plan. while i would love it to be vegan, the others would want to include dairy prods....at least we'd keep it local.
we have the whole "scene" worked out, the style, uniform, ideas for pastries/ light eats....and a plethora of teas!!! (and some coffee too.) it would be a place for creative ppl, artists, local musicians..and would be open late as an alternative to the bar scene.
sigh...a girl can dream.... ::)

That's great! Can I teach Art History to people too? That would be the best--teaching while eating treats! Heck yeah! You got yourself your first chef! OK--where do I need to relocate too??? :P

My sister and I thought about that this summer. We would call our restaurant, "A Day No Pigs Would Die." (after the book). She'd make all the dishes (she's a ceramics major) and we'd steal all the recipes off Vegweb (giving credit where credit is due, of course)!
If anybody does it soon, I'm a pretty great dishwasher.

I'd open a bakery that only sold sweet potato pies and cranberry scones. Yup, that's all. :)

I would so love to open a vegan restaurant. There are a few in Amsterdam, but....I dunno, they can be so much more creative with the menus! I absolutely LOVE hummus, but there is so much more to veganism than that!
Here is what I think is a very inspiring place in Dublin, menu-wise, and also atmosphere-wise. I didn't get a chance to go when I was there this month, but next month I will definitely stop by!
They have breakfast, lunch, dinner, and brunch. Vegetarian, but with many vegan options, and when egg is used it is always free-range.
My kinda place.

;D I dreamt that I bought an antique shop right on main street in my town and converted it into a vegan bakery/restaraunt. All of the furniture and dishes were from garage sales & second hand shops, I had a green house in the back & bought locally grown produce as much as possible.....There was a little booth in the front with free water, fruit & an organic "sports drink" that I made from scratch with my own recipe for all the area bikers & runners.
When you first walked in the front was the bakery/cafe section which was a really fun chill out area with a bookshelf of pro vegan & buddhist & environmentalist type books that people could just borrow & return whenever they wanted. Then the back & upstairs was a really classy BYOB resturant....it was great!

A brewery and pub. Definitely.
With fantastic pub food.
And live music.
And if I'm feeling really ambitious, an inn to go along with it.
It's really annoying to go out and know that I'm only going to be able to get french fries at the pub while all my friends are able to get whole meals. Some places will have a veggie burger on the menu, but they are few and far between.
I'd love to do up old pub favorites veg*n. I'd have to perfect my vegan fish and chips, though. Not quite ready yet.

I think it would be fun to open a vegetarian/vegan sub shop, since I get tired of the veggie sub at Subway being my only option. There could be a Teriyaki Tofu sub, a roasted veggie melt, a Tofurkey sub...yum!

this is an amazing idea. because you can never find vegan pub grub (well, occasionally there will be a hummus platter). i'd do it.
