Big Ugly Jasmine Cookies
2-1/2 cups (600 ml) all-purpose flour
3/4 teaspoon (4 ml) baking powder
1 cup (200 ml) vegetable shortening (or margarine)
1/4 teaspoon (1 ml) salt (omit if using margarine)
2/3 cup (100 ml) sugar
1-1/2 teaspoon (7 ml) Ener-G Egg Replacer (or 1 egg equivalent)
4 bags Jasmine tea or Jasmine-Green tea blend
3 cups (700 ml) or so confectioner's sugar

Steep three bags of tea in two cups of near-boiling water until lukewarm and painfully strong, then remove tea. Preheat oven to 325 degrees F (160 degrees C). Combine flour, baking powder and salt. Cream sugar with shortening or margarine in a large bowl. Prepare egg replacer according to instructions, replacing all liquid with the prepared tea. Mix egg replacer thoroughly into the batter. Add another 2 tablespoon. (30 ml) tea into batter and mix thoroughly. Open up the fourth tea bag and dump the tea into the batter, mixing it in thoroughly. Gradually incorporate the dry ingredients. Add food coloring (green is particularly ugly) and mix it up well. Don't worry if it's mottled--it's supposed to be. Bake for 12 to 15 minutes until done by the old toothpick-test (a toothpick poked in the middle comes out dry) Mix confectioner's sugar with a cup of tea until it makes a goopy icing. Pour over cookies, then let cool. Enjoy!
