Chocolate Chip Cookies-Like They Should Be

What you need: 

3/4 cup raw sugar
3/4 cup brown sugar
1 cup vegan margarine
1 teaspoon vanilla
1/4-1/3 cup applesauce (enough to equal 1 egg)
2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 (12 ounce) bag vegan semi-sweet chocolate chips

What you do: 

1. Heat oven to 370 degrees Fahrenheit. Beat sugars, margarine, vanilla, and applesauce together in a large bowl.
3. Stir in flour, baking soda, and salt. (Dough will be somewhat stiff). Stir in chocolate chips.
3. Drop by rounded teaspoonfuls onto a cookie sheet. Bake for 10-15 minutes, or until light brown. Cool.
This is a recipe that my mom has been making my entire life, and I was so so so excited that they turned out so well after substituting a few things.

SO HOW'D IT GO?

These cookies are delicious but they crumble very easily before you can get them in the oven. The dough falls apart. Any suggestions on making the dough stick together better???

I used 2/3 cup of applesauce.

These cookies were amazing! They were almost gone in one night!

next time I'd probably use only 1/2 cup of brown sugar, because the chocolate chips add most of the sweetness.

I made quite a few modifications for this recipe:

1) Only used 3/4 cup sugar TOTAL
2) Only used 1/2 cup earth balance margarine
3) Used about 1 cup of applesauce

They turned out pretty yummmy with alot of chocolate chips! Two was enough for me!

Thank you, Cephi. That helps.  I like them soft, not crispy and flat either.

I saw this one posting below too with baking powder. Does the 3/4 applesauce and 1/4 corn oil replace all of the margarine?

"Super yum. I used 3/4 applesauce and 1/4 corn oil and I added 1/2 tsp baking powder for a cakey cookie. So. Good."

Saskia, the ones I made are definitely moist -- I was quite surprised.  As to fluffiness, I suppose they are as fluffy as cookies ever are, and as fluffy as I myself care for them to be.  However they are chewy, not particularly cakey.  If you want them fluffier and cakier, I suspect that some baking powder would do the trick -- I don't know, 1/2 or 3/4 tsp?

I prefer a moist, fluffy chocolate chip cookie. Does this recipe produce a moist cookie, or is there a better chocolate chip cookie recipe on this site that does?

I tried a chocolate chip cookie recipe in a vegan cook book but the cookies were kind of dry.

I HAD NO IDEA!  I had no idea that there were vegan cookies this good, much less ones I could make myself.  Like some others, I used 3/4 cup margarine and 2/3 cup applesauce; however, I didn't add any peanut butter.  I took them out right at or after ten minutes because I like a softer cookie, and my oven tended to fluctuate to a little below 370.  (I bought an oven thermometer today -- wow what a difference!  I had no idea my oven was so poorly calibrated.  I had to set it to ~310 to make the actual temp 370.)  They are PERFECT!  Soft but not too soft, exactly like they should be!  I ate one this morning first thing after getting up, just to make sure they're still good, lol!  They are!  These are the first vegan cookies I've ever make and I'm ecstatic over how they turned out.

Oh and I also added about 1/2-3/4 tsp almond extract and about 3/4 tsp chocolate extract.  I think the almond makes a HUGE and VERY positive impact.

First of all, let me say...YUM! My omni boyfriend has been begging me to make these again, and I think I'll treat him to some tonight!

I, too, make the usual substitutions:

3/4 cup of margarine instead of a cup (I used Parkay last time, I think, but will try EB this time)
2/3 cup of apple sauce instead of 1/3
A couple of tablespoons of SmartBalance Omega-3 fortified peanut butter

Instead of making 3 dozen small cookies, we made a dozen really big cookies! They were delicious, but of course required a longer cooking time. They were crispy out the outside and edges and wonderfully chewy on the inside. My favorite chocolate chip cookies EVER!

I added oatmeal & used whole wheat flour... these cookies are AMAZING!!!!
