Easy Pasta Salad
1 (16-ounce) box rotini pasta
1/4 cup oil
1/2 green pepper, diced
1 clove garlic, minced
1 (15-ounce) can stewed tomatoes
2 tablespoons vinegar
1 tablespoon Italian seasoning
salt, to taste
pepper, to taste
vegan meat alternative such as chick n strips, to taste (optional)
1/2 cup or more vegan mayonnaise (Vegenaise)
garlic salt, to taste
1. Cook pasta according to package directions. Drain, rinse with cold water to cool, then rinse again.
2. In a pan, heat olive oil over medium heat. Add bell pepper and garlic; cook until soft. Add tomatoes, vinegar, Italian seasoning, salt, and pepper; stir to evenly mix and heat until smooth.
3. In a bowl, combine noodles, pan mixture, and mayonnaise; mix thoroughly.
4. Serve topped with vegan meat alternative and garlic salt.
