Enjedra
1 cup brown rice
1 super large or 2 medium sweet onions, chopped
2 tablespoons olive oil
2 teaspoons cumin
2 teaspoons salt, or to taste
1 cup red lentils
steamed spinach or kale, to serve
1. Add 1 cup of rice to 2 cups water. Bring to boil. Lower heat, cover and simmer 45 minutes. Add onion into pan with cumin and salt. Saute in olive oil until almost carmelized, about 10-15 minutes.
2. Add red lentils and 2 cups water to the onions. Bring to boil. Lower heat and simmer, stirring occasionally until lentils are cooked and very smooshy. When stirred towards the end, they should be smooth.
3. Steam spinach or kale. (Sometimes I'm feeling lazy and just microwave a 10 ounce package of frozen spinach; works great!)
4. Serve lentil mixture over rice and top with greens.
SO HOW'D IT GO?
I like it. I made a few modifications. I used red onion and added a finely chopped tomato after 5 minutes of sauteeing the onions. I also added a dash of tumeric. Lastly, instead of steaming the kale, I sauteed it with olive oil, garlic and lemon. The lemon contrasts nicely with the cumin.
This was surprisingly good!
Almost too good to be true. You can do this in one saucepan though. Just add the rice, lentils and 4 cups of water, or broth, to the caramelized onion. Adding a few cloves of crushed garlic to the onion/cumin/salt mixture does well too. (It's just a combination of the Amazing and Versatile Rice & Lentils recipe with this one.)
sooo good. subbed couscous for the rice, and used kale and brown lentils. also used some vegetable broth for the couscous and added some salt and garlic to the kale. i am so grateful for a recipe that actually gets my husband to eat kale - willingly! : ) definitely a go-to dinner. thanks!!!
wow!! This was GREAT. I used couscous instead of rice and steamed swiss chard instead of spinach. I wanted something a little different and a little ethnic - - and when I found this recipie, I thought it was perfect. When my DH saw what was for dinner, he went and got a gardenburger instead (lol), but then our 3yo wanted seconds and he decided to try it - he really liked it! I thought I would have enough left over for lunch the next day, but that wasn't the case....we ate too much of it.
And - I agree with the previous reviewer - - it is the onions that make this dish!! Thanks! :)
YUM.....My whole family loved this! I added 4 cloves of garlic to the onions and olive oil, and also just added the fresh baby spinach to the lentils in the last 5 minutes of cooking. This will be an easy go to meal for those crazy evenings of football, cheerleading, dance, wrestling or whatever practice!! ;)b
Really delicious, easy meal. I did use red lentils but they still seemed to take forever to get to the consistency everyone was talking, and added another cup at least of liquid. It was worth the wait though. The onions gave such sweetness to the lentils. It was a hit with the whole family. A definite keeper.

Absolutely delicious.Contrary to those who thought it needed more salt, I thought it had plenty of salt verging on too much and I will cut it just a tad next time. I also had to add significantly more water, perhaps because I used a cast iron skillet instead of a pan and the water evaporated quickly from it.
Anyway, this simple, yummy recipe will definitely be made again.
This is a new favorite of mine; I absolutely love it. I use red onion and extra garlic. With steamed kale, I seriously can't get enough. Yum!
