Infamous White Sauce
2 cups pasta (anything except angel hair, spaghetti, etc.)
1/2 (10 ounce) package frozen spinach or 2 cups frozen broccoli
vegetable oil, as needed
1 tablespoon minced garlic
3 tablespoons vegan butter
2 tablespoons flour
1 cup nondairy milk
garlic salt, to taste (I use McCormick Sea Salt and Garlic Grinder)
pepper, to taste
3-4 tablespoons dried Italian seasoning
1. Start boiling water for the pasta. Add pasta to boiling water as soon as its ready. In a small pan, spritz some oil over low heat. Add the spinach or broccoli and the garlic. Saute and then set aside.
2. In a medium pot, drop the butter in and melt it. Add flour and mix it up well. Add nondairy milk, and keep stirring. Add garlic salt, pepper, and dried Italian seasoning. Turn the heat up to thicken it.
3. Add veggies to the drained pasta and add the pasta to the white sauce. Enjoy!

SO HOW'D IT GO?
This was really good, an all around hit in my household of two vegan one vegetarian and a meat eater. I used a little less than three tablespoons of Italian season and I use fresh spinach, and one and a half sauce mixture.
You can also use besan (garbanzo bean flour) in place of the regular flour. Make sure you cook it fully in the butter/oil to get rid of all the raw flavor. Roasted besan has a wonderful flavor all its own :)

This was AMAZING!!!! I used spinach and added in some mushrooms and then poured the white sauce over that and the pasta! It was to die for! My family isn't vegan and refuse to eat about 90% of veggies so I just poured the white sauce over the pasta for them and they loved it too! This recipe is a definite keeper!
This was super easy and so tasty! I had a non-vegan friend over for dinner and he could not believe that it was vegan. This will definitely be in my rotation! :)
this was amazing the only thing i did differently was i added fresh garlic to the sauce and added a little bit of oil this was great and i will make this a staple recipe
