Melty Cheese

What you need: 

2 cups nondairy milk, divided (I use soy)
4 ounces pimentos
1 1/2 teaspoons salt
1/2 teaspoon onion powder
3-4 tablespoons nutritional yeast flakes
1/4 teaspoon garlic powder
2 tablespoons cornstarch
1/4 cup raw cashews
1 tablespoon lemon juice

What you do: 

1. Blend cashews and pimentos in small amount of milk until smooth, add remaining ingredients (including milk), and blend to mix.
2. Cook in heavy sauce pan until thick, stirring constantly.

SO HOW'D IT GO?

This turned out really great! I mixed it with some whole wheat pasta, topped off with homemade breadcrumbs then baked it in the oven. It went over very very well, especially for the people who are not huge fans of nut yeast.

I've tried several other "cheese" recipes, but have been disappointed with them all. I tried this was and was really impressed!  It's great!

OK, so I read all of the reviews, but the last time I made a highly rated sauce it was awful. NOT This one!!! Yummy. Couldn't wait, as I was making it I was dragging tortilla chips through it - but then made a plate of nachos with the melty cheese and jalapeno peppers and I am in LOVE. I am going to try this with veggies as I think it will be divine and will also serve as the cheese in my gratin dishes. Oh, and I know it will make really yummy enchiladas.

This recipe is perfect as is! Don't change a thing! The sauce will thicken as soon as it starts to bubble... use a whisk... a cheez whiz like texture... LUV IT  :)>>>

this was dope! zomg. i ate it all before i could go buy chips...

i subbed a small can of mild green chilies for the pimento, just didn't blend them. also added a little salsa and paprika, reduced the salt... yeah. sooo good!

my favorite way to eat it (don't laugh, this may seem weird but it's awesome) is mixed with teriyaki sauce and leftover noodles or rice.  when i was a kid i would melt velveeta and teriyaki sauce on leftover spaghetti all the time... my first recipe, perhaps? i called it noodles and kid sauce.  cause, see, i was a kid...  and it tastes like comfort food heaven  :)>>>

Yes, this is good. Really satisfies the craving for the 'nacho cheese' of non vegan times. Great with nacho chips. We had to put it away so we would stop eating it!

Ahhhhhh! This stuff is amazing!!!! I'd been going through major mac and cheese withdrawal so I figured I'd give this a try.

I did add a little bit of pepper to the sauce after I mixed it with pasta but yeah <333 awesome!

Yum! Great sauce. I didn't have any pimentos, so I just used a bit of tomato paste and it was great. Probably not the same color as it would be with pimento, but whatever, I'm not picky. It did seem a tad salty, so I'll try reducing the salt a bit next time, but I like my food a little less salted than most other people. I think I'm going to try some scalloped potatoes or something with this sauce (after I stop snacking on it).

;)b  This is absolutely the best!!! My husband could not believe there wasn't cheese in it. I added the Rot-el and made nacho cheese sauce. We used Mission chips but next time I think we are going to make our own tortilla chips so we can bake them. Thank you so much for this recipe.
