Melty Cheese

What you need: 

2 cups nondairy milk, divided (I use soy)
4 ounces pimentos
1 1/2 teaspoons salt
1/2 teaspoon onion powder
3-4 tablespoons nutritional yeast flakes
1/4 teaspoon garlic powder
2 tablespoons cornstarch
1/4 cup raw cashews
1 tablespoon lemon juice

What you do: 

1. Blend cashews and pimentos in small amount of milk until smooth, add remaining ingredients (including milk), and blend to mix.
2. Cook in heavy sauce pan until thick, stirring constantly.

SO HOW'D IT GO?

I happened upon vegweb today quite by accident and came upon this recipe, I am not vegan by any means but am attempting to improve my diet and use less animal products. This recipe intrigued me and I had the ingredients on hand so I thought I would give it a try.
AMAZING!  The only thing I added was a teaspoon or so of dry mustard powder which I would do with any cheese sauce, I combined it with whole wheat elbows and made some great mac & cheese.

i was so scared that this wasn't going to turn out, but it DID! i followed the recipe exactly, and it was perfect. i'll use this a lot!

This cheese is AWESOME!! The nutritional yeast taste is very mild as there is not much in this recipe--tastes like the real thing! Thanks for the great recipe!!

i was so impressed with this recipe and i cant wait to make it again!!! i didn't even add the nuts and it as still amazing!!  :>  My omni family didn't believe there was no cheese in it!!

whooaa, so you didn't use any cashews? did you include the pimento?

just wanted to make sure, because i don't have any nuts and if it works without them, i'll definitely try this!

i'm sure the nuts would create a thicker texture, but i just used it as a cheese sauce and it was delicious. i did use the pimentos...though i'm not really sure what purpose they serve...you should try it

I didn't have pimentos but i had a can of chipotle peppers.  I added a few spoons of the sauce (not too much, a little goes a LONG way).  I also used more flakes and nuts.

I have a question I have never had pimentos before and I was wondering if those are hot?  I have interstital cystitis and I can not have anything hot spicy or with acid.

i'd check the label for the acid, but they shouldn't be spicy at all.
