Nutritional Yeast Queso Sauce

What you need: 

1/4 cup nutritional yeast
1/4 cup flour
1 teaspoon paprika
1 teaspoon salt
dash garlic powder
1 cup water
2 tablespoons margarine
1 1/2 cups salsa or 1 (10 ounce) can diced tomatoes and peppers
tortilla chips, to serve

What you do: 

1. In a saucepan combine dry ingredients (nutritional yeast, flour, paprika, salt, and garlic powder).
2. Whisk in water. Continue to whisk constantly over medium heat until mixture is thick and bubbly. Remove from heat.
3. Stir in margarine until melted, then stir in salsa. Return to low heat and cook just long enough for salsa to heat.
4. Pour over chips and eat like nachos or use as a dip.
Remember to always whisk it!
Source of recipe: I got this recipe from a friend a couple of years ago and it is by far the best vegan queso I have ever had. Add this to any and all Tex-Mex that you make or use as a spread on sandwiches.

SO HOW'D IT GO?

I love making this sauce!  I usually add beans and/or Boca crumbles and eat it over lettuce as a taco salad.

This I know has to be good, I love chips and dip. I plan on making this, this weekend for family dinner.

this was really good, i got a bit heavy handed on the garlic, and used smoked paprika, the person at my house thought i made it with a prefabricated vegan cheeze product, and very much enjoyed it. lovely snack with chips.

My husband and I are transitioning to veganinsm and thought to give this a whirl. He loved it! Nearly ate the whole thing! I thought I could taste the flour in it, like I didn't cook it properly.  :-[ So next time I'll make a rue with the vegan butter and should have even better success. Thank you for posting  :)

THis is the best vegan cheese I have ever had! I have tried making it with the cashews and pimentos and millet and stuff and this is  WAY better and WAY easier. I could do with a little less salsa in it but other than that it was awesome!

Loved this sauce!  First time using nutritional yeast.  Used 1 can of Rotel.  Funny... my mom made my son Velveeta and Salsa to use as a dip for his chips.  He didn't like it at all.  Made this tonight and my son ate tons of it!  Will def. make again!

Very simple to make and very good.  I have been craving Mexican food and just ate two plates of rice and chips with this sauce poured over it.

Based on the reviews, I doubled the recipe with the exception of the margarine (I used coconut oil) and salsa.  I used the single recipe amount for those.

My mom is coming for a visit and really likes chips and salsa.  I can hardly wait to teach her how to make this.

By the way, if you are concerned  about a high fat content, consider cashew cheese.  I would have used 2 cups of cashews for nearly the same volume of sauce.  So this is lower fat and cheaper.

I used this recipe for a quick mac n' cheese and loved it more than any other mac n' cheese i've ever made. delicious! 

- I added a small can of diced tomatoes and it thinned out too much, so i added a spoonful of flour and reheated it, whisking it, until it thickened into the lovely creamy cheesy texture of legends. 

- i also added spinach to my easy but delicious mac n' spicy cheese. it was fantastic!

Absolutey delighted and am currently proselytizing this recipe.

This is diviiiiiiiiine! I just found this recipe a week ago and I've already made it two separate times, haven eaten each batch myself. The only changes I made were to add a bit more nooch for flavor, and some cornstarch to thicken, as I found the sauce a bit runny.

This is also great without the tomato used for anything you would use cheese for.......over broccoli, in casseroles, on philly cheese "steaks". This recipe is now a staple in our home!
