Pumpkin Latte
What you need:
1 tablespoon pureed pumpkin
1/2 teaspoon cinnamon, plus more for topping
1/2 cup soymilk or soy creamer
Pinch nutmeg
1 to 2 teaspoons raw sugar, to taste
1 teaspoon brown sugar (optional)
1 cup fresh coffee
Vegan whipped 'cream'
What you do:
1) Mix pumpkin, cinnamon, soymilk and nutmeg with sugar and warm until steamy. Next, add soymilk mixture to coffee. Top with vegan whipped 'cream' and cinnamon.

I made this and doubled it for me and hubby this morning. I didn't change anything besides instead of the nutmeg, I used some pumpkin pie spice. It was really good!! We had it with some pumpkin muffins. Yum!!

MMMMMM. It was good. I ended up adding a little more pumpkin because I like it a little more pumpkiny (is 'pumpkiny' even a word?). I added the coffee to the pumpkin and milk mixture once the mixture was hot and blended it together. I think that helped keep it all blended together.
I made this last night and I guess I didn't mix it well enough, everything sunk to the bottom of the coffee. I also didn't add enough sugar (I used 1 tsp) and I skipped the brown sugar, so it was pretty bland.
I made it again this morning with 2 tsp sugar and kept stirring the coffee as I drank it. I skipped the whipped cream on top. It was very good! It's a perfect fall-time drink. I'll be making this again! Thanks.
