Simple Vegan Pesto
What you need:
3 cups fresh basil leaves
6 tablespoons pine nuts
2-4 cloves garlic
3/4 teaspoons course sea salt
6 tablespoons olive oil
What you do:
1. Put the basil, nuts, garlic and salt into a food processor or good blender.
2. Process (blend) until all the ingredients are finely chopped.
3. Add the oil and process until it's all worked in together. Enjoy.

Sooo good. We only used 3 tbsp of olive oil and added an avocado. Turned out great!!
I have made this 2 and loved it both times but I have a question any one could answer I guess. So I just throw everything into a magic bullet. But the pine nuts don't get really chopped. Is it just the bullet? Should I chop them in something else? It still tastes good but....I want the pine nuts to be smaller.
Yes, you generally want the nuts chopped pretty finely for pesto. I'd try chopping the pine nuts by themselves in your magic bullet until they're finely chopped, and then add in the remaining ingredients and pulse until you get the proper pesto consistency. If that doesn't work, you may have to use some other method for chopping the nuts.

This was excellent! I served it with stir fried broccoli, tofu and fettuccine noodles. Yum.
oh and I didn't take a picture because it would not do it justice and Rivers picture would far surpass mine.
I had never had pesto before but this recipe looked delicious. And I knew I liked basil so I follwed the recipe exactly and poured over some penne noodles and it was sooo good. I love it. I used fresh basil and I think it makes a big difference. I might try it wil walnutls last time just because the pine nuts at my local store is twice that of walnuts.
I tried this today, and I have to concur - it's easy and tastes wonderful! Like a previous commenter, I substituted lime juice for half the oil and it was still great! Thank you for sharing!
;D :) This is the best pesto I've ever made...I did not have pine nuts I always use walnuts...You do not even miss the cheese...Who needs it...YUM...Thanx
Never been a huge fan of pesto but I liked this. I found myself snacking on the leftovers.
I'll repeat previous poster's advice and advise you to take it easy when adding to the pasta. A little goes a long way. Lots of garlic in mine! Tastes great but WOW, bad breath. Next time I will try adding lime as another poster suggested to add some zip. Thumbs up from me.
This was SO AMAZING (and addicting)! I've never made homemade pesto before, but this really blew me away. Luckily I have a TON of basil growing in my garden, because I must make this again! So easy too. :D Yum!
