Tofu Mutter

What you need: 

1 pound extra-firm tofu, cubed (frozen and thawed, if desired)
canola oil, as needed
1 large onion, finely chopped
1 teaspoon ground cumin
1/2" section ginger, grated
4 cloves garlic, minced
2 tomatoes, diced
1 green chili (or 2 jalapenos), chopped
4 green onions, chopped
1 teaspoon salt
1 teaspoon turmeric
cumin seeds, to taste
black and red pepper, to taste
garam masala, to taste
paprika, to taste
garlic powder, to taste
1 pound frozen peas

What you do: 

1. For traditional style paneer, deep fry tofu. Heat canola oil to 350 degrees F in a saucepan and fry tofu in small batches for about 2 minutes until golden, or keep raw.
2. Heat 1-2 tablespoons canola oil in a very large pan. Add the onion and saute over medium heat. Add the cumin. When it begins to brown, add ginger and finally garlic. Saute until well-mixed and fragrant.
3. Add tomatoes, green onions, and green chili. Cook until tomatoes become liquidy. Add salt and turmeric. Add all other spices, to taste. Cook for a few minutes until fragrant.
4. Add raw or deep fried tofu. Cook until tofu has absorbed all flavors (5-10 minutes). Add peas. Cook for an additional 10-15 minutes, or until peas are hot and tasty.
Serve with an Indian vegan bread or basmati rice.

SO GOOD!

I made mine by frying the tofu first and then took the advice of a previous poster and added flour at the same time as the cumin, and a bunch of natural soy milk towards the end.

Amazing! Also - I did about a tsp. of each spice just to get it crazy hot.

That turned out great!

It was a little hot, so I think I'll leave out the green chili next time.  The only changes I made was that I used vegetable oil instead of canola oil and 2 cans of stewed tomatoes (though, I removed some) instead of 2 tomatoes.  My girlfriend added a little bit of soy milk, too.

Would be curious as to users suggested quantities of cumin seeds, red and black pepper, garam masala, garlic and paprika (that's a LOT of spices to do 'to taste').

i followed your measurements except for the black/red pepper and i added an extra teaspoon of garam masala. i also added an extra tomato and a cup of stock and i was really happy with the results!

Well, here's a stab (I've not prepared this dish yet, though I have done a good bit of cooking out of Indian cookbooks):

1 to 1 1/2 teaspoons cumin seeds
1/4 teaspoon each of red and black pepper
1 teaspoon garam masala
1/4 teaspoon paprika
2-3 more cloves of garlic

I would put the cumin seeds in step 1 and add additional ground cumin later on if you felt it necessary.

Again, this is an unattempted guess. (and I like things spicy :) )

My girlfriend made this a while back, and it was great. I haven't had it until today, when I decided I'd give myself a go at it, I didn't have 2 tomatoes, I had 1/2 plus ketchup, and it tasted great to me. This recipe is great, and easy to make.  >:D

This was delicious!!  I started out frying the tofu but it wasn't going very well so I put it in the oven and they turned out perfect.  When it was in the dish I really couldn't tell the difference between tofu and paneer except the tofu didn't make me feel sick afterwards!  Great sub.  Very, very tasty recipe!!
I halved the recipe and upped the spices quite a bit, which didn't make it overly spicy and I'm thinking that if I hadn't done that it would have turned out a bit bland.  This is going in my regular Indian line-up!

I'm really 'bad' about following recipes (even when I want to), so I made a different version of this..it was really grand though! I used basil canned tomatoes, ground ginger, 1 jalapeno..and some different spices. Oh, and lots of cilantro! Cilantro made it really fabulous.  ^-^

Mmmm...we made this once or twice about a year ago and it was goooood.  Will have to make it again soon.  :-9

I got to admit, I had a few difficulties with this one.

I had to add more water, it was quite dry.  Also, the lack of spice proportions for such a variety of spices did not go so well with my guessing.  It turned out ok, but certainly not great.  Could be me though, and my guessing skills.  ::)

Usually when I have this dish it is more creamy.  Anyone know a recipe for that version?

WOW. This was yummy. I fried the tofu, used two-14ounce cans tomatoes, probably about 1 cup peas, and added some "Salsa Verde" instead of green chili/jalapeno and it was fantastic.  The tofu was incredible in this.  My husband loves to go out for Indian food and he says this is on par with anything he gets in restaurants. Even better for me though because now I can make this instead of watching him eat meat at the restaurant. He loved the tofu in this and he normally hates tofu.  THANK YOU!

Yum yum yum... i totally cheated, and used real paneer instead of tofu. i went a little easy on the spices, and it turned out a little bland, for indian food-- so don't be shy!
also, i think a whole package of peas might be a bit much (this must depend on the bag, of course). use your judgement.
this is delicious!
