Vanilla-Scented Tofu Oatmeal
3 oz tofu
1/4 cup rolled oats
small dash of pure vanilla extract
other flavorings, if desired (e.g., raisins, nuts, almond extract, fruit, etc.)
1/2 cup water
dash of salt
The night before, drain the tofu using a tea towel to wring out all the water. In a small bowl, mash the tofu up with a spoon and add the vanilla extract and any other spices you might want. Stash the tofu in the fridge and go to bed. sweet dreams!
The next morning, take the tofu out of the fridge. in a small pan, mix the oats, water and tofu together. Stir over low-medium heat until the porridge thickens. Add the salt at the last minute.
Serve this tasty porridge with fruit, raisins, cinnamon, almond/soy milk, whatever! This is an easy and protein-rich breakfast that will fill you up right!
SO HOW'D IT GO?
This has made it into our regular breakfast rotation. I always marinate the tofu in vanilla & cinnamon and when I cook the oatmeal, I add flaxseed meal & wheat germ along with whatever fruit we're having that morning. Both me and my 16-month-old son love it! Not only do I enjoy the flavor & texture the tofu adds to the oatmeal, I also appreciate that this breakfast will sustain me through my morning workout whereas oatmeal alone would not.
I have made this recipe a few times now, and it's gotten better every time. Most recently, I marinaded the tofu overnight in vanilla, cinnamon, and nutmeg. Then I added ground flax seed, blueberries, sliced banana, and a teaspoon of brown sugar to the recipe. I've also made it in the microwave and it works just as well!
I made this last night/this morning. I just used vanilla, cinnamon and salt, but it wasn't bad. all I had was firm tofu, and I'm wondering if silken might work better.... also, next time I think I'll add honey and sunflower seeds.
what kind of tofu is best to use?
Tofu and oatmeal, two of my favorite things and yet it never occurred to me to try combining them. This recipe worked out really well. I used vanilla and cinnamon for the "marinade," then cooked as directed and added a splash of maple syrup at the end. Very tasty!
