Beans and Rice for Lazies

What you need: 

1 clove garlic, diced
1/2 medium onion, chopped
oil, as needed
1 can (15 1/4 ounce) beans, drained and rinsed (my favorite is black)
1 can (14 1/2 ounce) diced tomatoes, undrained
1 teaspoon cumin
2 cups brown rice, prepared (about 1/2 cup uncooked)
salt and pepper, to taste

What you do: 

1. Prepare brown rice before starting beans, according to package directions. Brown rice takes about 45 minutes.
2. Saute garlic and onion in a pot with heated oil until onions are translucent. Careful not to burn the garlic.
3. Turn down heat, add beans, as well as the entire can of tomatoes including juice. Add cumin.
4. Simmer on low-medium heat, stirring occasionally. The way I like them takes about 20-25 minutes to be kind of mushy together.
5. Serve whenever they are your desired consistency. Serve over a bed of brown rice and season with salt and pepper.

SO HOW'D IT GO?

Not sure why I can't give this a rating, but if I could, it'd be five stars. One of my favorite dishes to make. I'll take pictures the next time I make it. Good job!

I love this recipe. I usually use pinto beans, add a bell pepper and celery and hot sauce to give it a more creole feel.

With a meat eating husband, I have to cook two different meals each night. This was quick, easy, and delicious. I served it with zucchini and had kidney beans in it.

Wow this recipe was amazing! It is perfect for people who are just beginning to learn how to cook (like me  ;)b). I used fresh tomatoes because I didn't have the canned type and it came out perfect.

Easy and tasty. For increased laziness, just add the beans and such toward the end of the rice's cooking time.

When I make this at work, I sub onion and garlic powder for the onion and garlic, half a can of tomato sauce for (or omit) the tomatoes, add oregano, add crushed red pepper (sub chili pepper, salsa, or sriracha at home) and sub chili powder for cumin (I keep meaning to bring some in, as I go crazy for cumin!). It's still delicious that way. I'm on dish duty, so I use the one pot method.

Fast, easy and tastes pretty good!  I used a rice steamer for the brown rice, and drained the tomato juice from the canned tomatoes into the measuring cup for the rice-- as suggested.  I added a the frozen block of spinach to the bean/ tomato mixture, upped the garlic to 2 cloves and upped the onion to one small onion.

great easy recipe.  My husband and 3-year old boy liked it.  I added chopped cilanttro and a little bit of lime juice at the end. Delish!

The only thing I have to say about this recipe is... *drum roll* I loved it.  :) A lot. I shook some ground red pepper into it and made up some quick-cooking rice (I'm really lazy) instead of brown. Oh, and my non-veg family members loved it too. I'll definitely be making this again!
